I love pesto, but lets face it, cheese just isn’t very healthy for you. I find yeast flakes to be an essential part of my vegan cooking and such a good substitute for regular cheese. The smell, when in the box, can put you off a little, but trust me, if served correctly it will give a delicious nutty/cheesy taste and a worthy substitute for parmesan.
Whisk these ingredients in a food processor:
- Big handful of basil
- 3 Tablespoons yeast flakes
- 1/4 Lemon juice
- 1 or 2 Cloves of garlic
- Covered generously with cold pressed olive oil
- Add Himalayan salt to taste
Ps. Feel free to leave out the garlic if you have a date later.
