Try this tasty vegan red lentil soup. Its one of my favourite healthy comfort foods and will keep you warm and full the whole day.
 
Recipe: 
 
To make it, start with some olive or coconut oil in a medium heat pot and add in:
– 1dl red lentils
– 1/2 chopped big onion
– 1 chopped garlic clove 
– 1 tsp whole cumin seeds
-1 tsp mustard seeds
– 1 tsp fresh thyme 
– 1/2 tsp chili
When the onions turn transparent add:
– 1 veggie stock cube (gluten and sugar free)
– 1 can of tomatoes (or preferably chopped fresh tomatoes)
-1/2 can of coconut milk
 
Let it simmer for 20 min or until the lentils are soft. Blend with a hand blender until soft consistency and add hot water until it reaches the desired consistency.
 
Serve with a spoon of crème fraiche (this is not vegan…!), some toasted pumpkin seeds and fresh chopped basil or try drizzling my vegan pesto (see my recipe).
