You will need:

  • Rice bread
  • A ripened avocado
  • 1 Egg
  • A handful of rocket leaves
  • Half a lemon
  • 1tsp Olive oil
  • Salt & pepper

Eggs are always a winner for breakfast and serve as a great high protein dish that will keep your hunger satisfied until lunch!

To make this simple yet filling dish, boil a pan of water and slowly drop the cracked egg in using a ladle. A really soft poached egg should take around 2 minutes and a soft-to-firm one will need 4 minutes (this will depend on the size of the egg and whether it’s been refrigerated).

Cut the avocado in half, and scoop into a bowl using a tablespoon, then crush it using either the back of the spoon or a fork, until it’s mushy.

Toast the rice bread in a toaster or under the grill until lightly golden.

Dollop the avocado on the toast, add the rocket and top with the poached egg. Garnish with a squeeze of fresh lemon juice, add a little glug of olive oil and sprinkle with alt and pepper to taste.

And scoff!
